This was a first for me, and I am really glad I gave it a try. I was inspired by the blog “foodiecrush” when I came across her Vietnamese Spring Rolls on Pinterest. The original recipe had a lot more vegetables included, but I am actually not a big fan of crunchy vegetables in my spring rolls. I know, shocker considering I love vegetables everywhere else! I’m that person who orders sushi with no cucumber, but then can eat an entire one raw and not blink an eye. Some things just don’t make sense I suppose, but non-the less, this is a GREAT dish. If you have never used the mix of cilantro, mint and basil... then you are in for a treat. I promise you, the mixture of these 3 herbs is something harmonious. The first time I had tasted that combination was in chutney made from a local restaurant here in Toledo called “Balance”. Clean Asian food that is too die for. A lot of people enjoy a peanut sauce with their spring rolls, but this household is a heat fan so I made a Sweet Chili Sauce that brought everything together. A great balance of sweet and spicy.
