These tacos are just what you need on a hot summer day. Organic refried beans topped with rice and fresh vegetables. How can you go wrong?
Veggie Packed Tacos Servings: 8 Tacos
Corn Salsa
Salsa Directions: Combine all ingredients and set aside. Spanish Rice
Rice Directions: First sauté the rice, onion, cumin and chili pepper in butter. After the rice turns a light golden color, add in the chicken stock. Cook as directed on your specific rice choice. Once rice is almost done cooking, add in the rest of the ingredients and let simmer for 15 to 20 minutes. Taco Directions: Assemble tacos with refried beans, rice, avocado and top with corn salsa! I used organic blue corn shells but you can easily do flour, yellow corn, or even tostadas! Whatever is on sale is the way I go!
