In Toledo we have a hidden gem called “Tiger Bakery”, and it is this little mom and pop shop where all of the Lebanese food is made from scratch every day. It is one of my favorite places and is so delicious. Cabbage rolls are always the main thing I order there, but unfortunately it’s not exactly close to home, so I have decided to start making them myself! Although they are easy to make, they can be a bit time consuming. My tip to making this a faster dish is to make the rice ahead of time. These have a pretty lengthy baking time so the less time you spend on prepping the ingredients, the better. I made my stuffing on Sunday, and prepared these on Tuesday. As for preparing the cabbage, the easiest way I have found is to cut the bottom of the head off, and place in a boiling pot of water to help the leaves come off a little more easily. After that, I placed them back into the water to soften even more. The more soft they are, the less baking time overall. This was a trial and error moment for me when I first made these. I realized I did not allow them to boil long enough and it took them FOREVER to soften in the oven. The measurements below are enough to make 8 rolls; Demetrius and me eat two each, and pack the rest for lunch. So if you have a bigger family with children, I would recommend doubling the recipe and using a 9x13 pan. I paired these with a baked sweet potato because well, carbs are the best thing in life.
