This was such a fun recipe to create. Italian is one of my favorite types of food and especially manicotti. But I got too thinking; with as cheesy as manicotti is, I bet this would be a great dish to sneak in some vegetables as well! Eggplant and mushrooms go so well with Italian dishes. And don’t be intimidated by the fennel, I will be posting a video later on about how to handle fresh fennel (also known as Anise). For those of you who don’t know, fennel is the spice you taste in a lot of Italian sausages. It comes in a seed form, or fresh. Fennel seed is great for meats, homemade marinara, and anything italian. It can however be easily over utilized. So make sure too go easy on it when using it for the first time. Too much can add a heavy black liquorish taste to your dish. And as if there wasn’t enough cheese in this dish already, lets just admire this garlic bread naan for a minute. So soft, so cheesy, so good! And I am well aware this is not the healthiest addition, but we have to treat ourselves every now and then right!
