These are great to make for “ahead of time” breakfasts! I do enough for two bowls at a time so I can eat them for the mornings I need a quick breakfast. This recipe was actually inspired by the frozen breakfast bowl “Good Food Made Simple”. Although I enjoyed them a lot, they sold for almost $4 dollars a piece. I knew there had to be a cheaper way, so I thought why not just make them myself! They tasted spot on, and I will never go back. Southwest Egg & Potato Breakfast Bowl
