You might not believe this but it took me a long time to appreciate the taste of beets. I would always juice them, but for some reason never cooked with them. But, that has all come to an end with this delicious salad! As a tip for a faster meal, I suggest roasting your beets ahead of time to make for an easy assembly.

Note: For vinaigrette, there are a lot of different quick recipes out there but I personally enjoy making my own reduction. I reduce down 1 cup balsamic vinegar by boiling on medium heat with minced garlic, salt/pepper, and 1 bay leaf. After reduced I just add in olive oil and shake! Cooking’s a beautiful thing; you don’t have to be exact on your measurements. Have fun with it!
