Following my recent chili mac recipe, you can also use it to make a delicious taco salad for lunch. A great way to sub out sour cream is to use plain greek yogurt. I honestly can’t taste the difference and it holds way more protein than traditional sour cream. Taco salad has always been one of my favorites and I thought when I decided to cut back on meat, I wouldn't ever be able to enjoy it again. Well, I was wrong. This is such a great substitute and I don't even miss the meat! Meatless Taco Salad Ingredients:
Directions: No real directions needed here, toss everything together and enjoy! Notes: If you want to sub the chili mac, just use a mix of pinto and black beans instead! I would recommend cooking them with a 8 oz tomato sauce with chili powder, cumin, garlic powder, salt and pepper to give you more of a mexican taste!
