You will notice that a lot of the salads I make, are usually only 2 servings worth. This is because I cannot, for the life of me, get Demetrius to eat salad. But someday… maybe someday he will get on board! (but probably not) It’s a guy thing right?? Something you might think is weird is that I always add red kidney beans (or any bean but prefer kidney), to my greek salads. It is added protein, nutritious, and gives the salad a good texture! And when adding avocado to any salad, you will notice you don’t need as much dressing because of its high fat content, it spreads so nicely among the dish. And I don’t know about you but for me, the best part about Greek salads is the delicious dressing! I have made my own, and it turns out excellent but sometimes you just need a quick fix! I buy Marie’s Greek Vinaigrette. The only thing I don’t love about this product is that it is made with soybean oil. I try hard not to eat a lot of soy BUT, we cant do 100% all the time. The rest of the ingredients are pretty clean. I have posted a picture above for you to make your own judgment. We are all different when it comes to what we think is right for our bodies. Yes of course there is a lot of common ground amongst us all in what makes us healthy, but I also try not to push my healthy eating beliefs on others. Some articles will argue that soy is good for you, and since I am not a scientist, I will not debate this fact with anyone. Do what you think is right for your body, and makes YOU feel good! Heavenly Avocado Greek Salad
Ingredients Servings: 2 salads (dinner and lunch the next day)
Directions Divide all ingredients into two bowls, and serve! I know, I know, pretty difficult directions :) Note** Most greek salads are made with cucumbers as well, I personally do not like them on my salads but if you are a fan, then you should defiantly add them!
