Did anyone else have a super indulgent holiday weekend? Because I sure did. But, I’m ok with that, and I actually think it helped me remember just how crappy I feel when I eat badly for to long. Memories of my old sluggish self resurfaced, and random stomachaches, just like the old days! But fun was had, friends were visited, and memories were made. No harm in that! Tonight I was really craving chicken. I don’t eat a lot of meat but I do listen to my body when it is craving it. Which isn’t as often as you would think really. Since I am trying to do a little damage control and make up for all the vegetables I did NOT eat this weekend, I decided to do chicken parmesan over a bed of sautéed zucchini noodles. If you have never tried zucchini noodles, I suggest you do at least once. There was a time there when I was trying to replace everything with zucchini and because of that I started to get burned out. It took me a while to try these as well, but I am so glad I did. They don’t really have a particular flavor, and tend to take on any sauce you put over top of them. I cook them just enough to not be raw, but to still maintain there crunch. Healthy Chicken Parmesan
