It seems like lately I have been in the habit of hitting the gym after work so I have been all about these fast and easy dinners. Although morning workouts are still one of my favorites, my current fitness goals are better met when I hit the gym on a fully awake, non fasted state. So speaking of a fast dinner, this is where its at! I finished these in less then 15 minutes. To help me out even more on a busy night, I bought pre shredded lettuce, pre made pico, and used the old microwave trick for my corn on the cob! If you are not sure what that is, you simply wrap a wet paper towel around a shucked corn cob and microwave on a plate for about 4 minutes. Comes out perfect! Flounder Fish Tacos
