For the most part, I don't mind a challenge in the kitchen. However, some days I am just not blessed with the time to figure out a extensive recipe. Normally I make it to the gym early in the AM, leaving me plenty of time after work to play around with new recipes and flavors. However, there are those days where my sleep takes over and I have to make up for my missed morning workout, after work. These are the days I need something fast, easy, and made with ingredients I will have on hand. This is one of those recipes. The tortillas I like to use are Simple Truth Organic whole wheat tortillas. They are about 95% clean and do NOT lack in flavor. Tossed inside these delicious tortillas are fajita style veggies, eggs, avocado and cheese. After my first bite I was completly amazed at how great they tasted. Not that I was expecting them to not be good, but I’m telling you, these were GREAT! Demetrius gushed over them for quite a while. But then again, he was probably just happy I wasnt making him eat a kale salad with quinoa.. haha 😃 Easy Fajita Breakfast Quesadillas
