I was a little skeptical when I seen this idea of chickpea tacos. Not because I don’t love chickpeas, but because I wasn’t sure how well they would be in a Mexican dish. Well, it turns out they tasted great and the texture.. oh let me just tell you about the texture. Soft chickpeas paired with a crunchy hardshell!? Yes! I also need too mention how much the guacamole MAKES this dish. Although I made it with a very simple version, it paired very well with all the flavors and helped add a very vibrant and fresh component. Crunchy Chickpea Tacos
