Crockpot Minestrone Soup Servings: 6 bowls - 2 Carrots (diced) - 2 Stalks Celery (diced) - Zucchini (diced) - Onion (diced) - Green Beans (I used frozen bag) - 1 can diced tomatoes - 1 can red kidney beans - 1 can navy beans - 4 oz small pasta of choice - 4 to 6 cups of chicken broth (or vegetable) - 4 cloves garlic - 2 cups fresh spinach - Fresh oregano - Fresh basil - Salt - Pepper - 2 bay leaves - Dried rosemary - Onion powder - Italian seasoning Put all ingredients in crockpot except noodles and spinach. Use spices generously. Cook on High for 4 hours or low for 7 hours. 30 Minutes before done, add pasta and spinach. Cook pasta until el dente. Serve hot and top with fresh grated Parmesan if desired.
