What do you do when you are craving butternut squash soup but only have one little measly squash? Throw in some sweet potatoes! Why not right? Both are sweet, hearty, and nutritious. Followed by some delicious cashew cream to swirl its beautiful self all around that sexy bowl.... YUM. I also enjoy coconut milk when I have it on hand, but either way is delicious. Im always trying to find ways to cut out dairy but if you aren't sure about the cashew cream and don't like coconut milk, go for some heavy cream! Make it your own! Crock Pot Butternut Squash & Sweet Potato Soup
Ingredients Servings: 4 Bowls
Directions
If going with the cashew cream: Take 1/4 cup cashews and soak in 1/4 cup of stock with salt/pepper. Soak for up 20 minutes. Next, blend in a high power blender. (I use my nutri-bullet). Blend until it creates a thick creamy texture. Add half the mixture to the soup, and use the other half to top the bowls off!
