Who loves pancakes? Basically everybody right? Well these are everything you love about them, minus the added sugars, preservatives, and guilt! I have seen many recipes for simple pancakes made with only bananas and eggs with barely any protein, or so called “healthy” pancakes calling for ¼ cup of brown sugar… etc. I could never find the balance I was looking for. So, I decided to take a little knowledge from every terrible pancake recipe I have made, and find what WORKS. These are delicious, easy, and versatile. Instead of apples, I sometimes only add fresh blueberries, which makes it even easier. Like I often say, play around with recipes and make it your own. Just because these are cinnamon apple, doesn’t mean yours have to be! But, the combination of apples, almond butter, and pecans is indescribable. I also have a recipe similar on my blog, called Oat Blueberry Banana Pancakes that are also a delicious variation, but does not include a lot of protein, and are more carb heavy. Pancake Batter
Soft Cinnamon Apples (for batter and topping)
Optional Toppings:
