Baked salmon is one of my fiancés favorite dishes, and since I don’t eat a lot of meat or seafood, I like to mix it up for him once in a while! This dish is so light and delicious. And may I mention, only took me a total of about 30 minutes all said and done, that’s a winner! Also, if grilled salmon is more your thing, I recommend going for that as well. We are not allowed to own a grill in the apartment complex we live but once we buy a house of our own, I cant wait to try this grilled! This made a perfect 4 servings, which was awesome for just us, and our next day lunches. But if you are feeding a larger family and want some for leftovers, I would recommend doubling the entire recipe and shoot for 2 salmon fillets! Baked Salmon with Mediterranean Salsa and Orzo Pasta
